Cucumber and Tomato Salad


Basic Ingredients
1 cucumber cubed (I use Japanese cucumber)
1 tomato cubed (choose firm)
2/3 red onion sliced
herbs (parsley, mint, basil etc.)
black pepper
salt
olive oil
1/2 lime or lemon juice

variety
cheddar or feta cheese
pineapple cubed
cayenne pepper
cumin powder
baked pepper chopped

Directions
  • mix all ingredients together
  • serve immediately or chilled

Foodnote: One of my go to salad when I need to increase my healthy food intake. Super easy to make. Love to add the pineapple to add sweetness and the cheddar cheese for more heartier taste.

Easy Creamy Coleslaw



Ingredients
cabbage
purple cabbage
carrot
Japanese mayonnaise
apple cider vinegar
white pepper powder
honey
condense milk (optional)

Directions
  • shred cabbage, purple cabbage and carrot into a large bowl
  • in another bowl, mix mayonnaise, acv, pepper, honey and condense milk to taste
  • mix all ingredients together and keep refrigerated

Foodnote: Bought shredded veggies to eat with peanut sauce given by my cousin but decided to make coleslaw with the balance. This is just a basic recipe but still tasted so good to me. Original recipe added dijon mustard but I just use whatever I have on hand. Added condense milk because that is what I have it in the fridge and I want a creamy coleslaw. Will make this more often. Can just keep it refrigerated and munch whenever I feel lazy 😅

Fruit Salad



Ingredients
greek yoghurt (can substitute for cream)
condense milk
cheese

any fresh or dried fruits:
blueberries
apples
grapes
mixed canned fruits also can (but not healthy already hehe)
raisins
seeds etc.

Directions
  • mix yoghurt and condense milk
  • combined all other fruits/ingredients
  • keep in chiller overnight before consuming

Foodnote: I remembered eating a nice fruit salad at a hotel once. So decided to make my own. Saw a keto fruit salad recipe that called for all purpose cream and condense milk. I just use whatever I have on hand: condensed milk, greek yoghurt, blueberries, an apple, a small can of mixed fruits and shredded cheddar cheese. I adjusted the milk+yoghurt to desired taste and tadaaa... super yummy fruit salad hehe. I topped it with some dried fruits and seeds that I have. Delicious and "healthy" dessert woohoo.

Spicy Kedondong

Ingredients
500g kedondong peeled and sliced
2 tablespoon plum powder
1 bird's eye chilli finely sliced

Directions
  • combined everything together and chilled in the fridge
  • ready to eat on it's own or added to salad or rice

Foodnote
Kedondong is also called ba long long in Singapore. Found this sold at Big Box for less than S$2. When I google, I discovered that there are actually lots of health benefits of this fruit. Next time I will try to blend and make juice... yummy!

Citron Herb Salad with 6min egg

Ingredients
any pre-packaged mixed salad
orange (chopped to small pieces)
egg

citron dressing
chopped garlic
olive oil
Bragg's apple cider vinegar
korean honey citron tea

Directions
6 minute egg
  • put room temperature eggs in boiling water for 6 mins
  • scoop egg and put in another bowl filled with ice
  • egg should be firm but the yolk will be bright orange and a bit runny
Salad
  • prepare dressing separately by combining all ingredients to taste
  • pour over garden salad and orange
  • toss lightly
  •  top with nice 6min egg

Foodnote
Got the citron honey tea as a christmas present. Usually I made salad dressing similarly but with honey. I replaced it with the honey citron tea and is hooked. So yummy and is one of my favorite simple salad dressing now.
