Easy Creamy Coleslaw



Ingredients
cabbage
purple cabbage
carrot
Japanese mayonnaise
apple cider vinegar
white pepper powder
honey
condense milk (optional)

Directions
  • shred cabbage, purple cabbage and carrot into a large bowl
  • in another bowl, mix mayonnaise, acv, pepper, honey and condense milk to taste
  • mix all ingredients together and keep refrigerated

Foodnote: Bought shredded veggies to eat with peanut sauce given by my cousin but decided to make coleslaw with the balance. This is just a basic recipe but still tasted so good to me. Original recipe added dijon mustard but I just use whatever I have on hand. Added condense milk because that is what I have it in the fridge and I want a creamy coleslaw. Will make this more often. Can just keep it refrigerated and munch whenever I feel lazy 😅

Coconut Candy



Ingredients
2 tbsp butter
230g grated coconut (only the whites)
100g sugar
220g condensed milk
2 tsp vanilla
few drops coloring of choice
pandan leaf
pandan paste (optional. I added because I use green coloring)

Directions
  • grease pan/glass container generously
  • in a non-stick pan, melt butter on low heat
  • add other ingredients and stir for about 20min
  • the ingredients should clump together but not dry
  • transfer onto the pan/contrainer and flatten it levelling the top
  • leave it to cool for 30min and cut to small cubes
  • allow to cool overnight and remove from pan
  • keep in airtight container

Foodnote: I have grated coconut in the freezer so I decided to make this. Used to make this with mum during Hari Raya. It is so yummy and irresistible but because it is too sweet... I can't make this regularly huhu.

Boiled Chickpeas



Ingredients
2 cups dried chickpeas
1 bay leaf
3-4 cloves
few curry leaves
few dried chillies (optional)
1 tbsp sea salt
1 tsp chicken seasoning (optional)
2 tsp baking soda

Directions
  • wash and soak chickpeas overnight
  • drain the water and replace with fresh water to boil the chickpeas together with bay leaf, cloves and curry leaves for 1 hour
  • scoop and remove any white foams that appear on the surface of the water
  • after 1hr add in the baking soda and stir well and boil for another 30min
  • add in the sea salt and chicken seasoning and stir well and boil for another 30min (total 2hours)
  • check that the chickpeas is soft enough, remove from stove and drain

Foodnote: Since I love chickpeas, decided to learn to prepare it myself as buying the dried ones is very cheap. After checking the internet, fail on first try as my chickpeas turn out too chewy... finally success! I don't have pressure cooker so boiling time takes 2hours. But it is worth it. I can boil a lot next time and freeze it. When I want to eat it... just steam it again woohoo. So happy! Munching while WFH.

Spicy Chickpeas / Chilli Chana



Ingredients
1 1/2 cups of dry chickpeas 
2 tbsp olive oil
2 tsp smoked paprika powder
1 tsp cumin powder
1 tsp cayenne pepper
1 tsp chicken stock powder (optional)
sea salt to taste
sugar to taste
2 tbsp oil for frying

Directions
  • soak chickpeas overnight and boil for 2 hours till soft (add a pinch of salt)
  • drain the chickpeas, add olive oil, paprika, cumin powder, cayenne pepper and sea salt
  • mix well
  • using a non-stick pan, add oil till hot then add in the chickpeas
  • cook till the chickpeas is crispy... ready to serve

Foodnote: I love chickpeas so decided to cook this. Actually I just agak2 the recipe and it turns out yummy. Will definitely make this again as snacks. For healthier version... I will bake it in the oven next time. Maybe it will turn out crunchy... nom nom nom.

Roti Kering


Ingredients
bread (leftover or stale one also can)
sugar
butter

Directions
  • spread butter on bread, cut into smaller desired sizes and sprinkle with sugar
  • if using other than loaf, cut the bread thinly and to desired size
  • arrange on baking tray and bake at 120°C for about 20min till bread is crispy
  • that's all... can keep in airtight container for quite long

Foodnote: Just a childhood snack that I love. Made it for my niece who will be spending a lot of time at home due to the Circuit Breaker period. Even I can't stop popping it into my mouth huhu.

Churros


Ingredients
150ml water
40g unsalted butter
20g sugar
110g all-purpose flour
2 eggs
oil for frying

fine sugar + cinnamon powder for coating (optional)

Chocolate sauce
4g corn starch
10g water

50g dark chocolate
25g sugar
150ml milk

Directions
  • in a small pot, heat water, sugar and butter till boiling and sugar dissolves
  • lower the heat and pour sifted flour into the mixture and stir with a spatula till you get a ball of dough
  • move the pan to a table, spread the dough thinly and leave it to cool for about 10-15mins
  • add one egg at a time and mix till you get a soft dough
  • fill dough into piping bag with a star nozzle
  • pipe the churros on cut up parchment papers for easy frying
  • put the churros together with the parchment paper into oil to fry and promptly remove the parchment paper... 
  • fry till crispy and dark golden
  • (optional) once fried, cover the churros in sugar+cinnamon mixture
Chocolate sauce
  • mix the corn starch with water in a small bowl
  • in a pan, heat the rest of the ingredients, dark chocolate, milk and sugar till all combined and sugar dissolves
  • add in the corn starch mixture and keep stirring till chocolate sauce thickens
  • dip churros into chocolate sauce and enjoy

Foodnote: It is just an impromptu decision to try and make churros for the niece. I just use the available nozzle. It was nice... chocolate sauce will be nicer if I am more patient and let it thicken further. The churros also need to fry a bit longer so that it will be crispier. Overall... quite satisfied.

Tapai Ubi Kayu

Ingredients
ubi kayu (cassava) chopped and 3/4 boiled or steamed
powdered ragi (wine biscuit or yeast)
banana leaves & toothpick (optional)

Directions
  • placed cool ubi kayu in container and sprinkle some powdered ragi to evenly spread on the surface (can be layered)
  • cover the container and leave in a shelve or cabinet for 3 days
  • after 3 days, the ubi kayu will undergo fermentation and gives off a sweet smell
  • at this point, it is ready to be eaten or transferred in banana leaves and kept in the fridge

Foodnote
I am a fan of tapai and about time I made it myself. One day I am going to make apam tapai ubi... that would be fun! This tapai ubi is also good eaten with vanilla ice-cream... yes... eaten with ice cream. I had that as a dessert once during my friend's wedding and love it.

Spicy Kedondong

Ingredients
500g kedondong peeled and sliced
2 tablespoon plum powder
1 bird's eye chilli finely sliced

Directions
  • combined everything together and chilled in the fridge
  • ready to eat on it's own or added to salad or rice

Foodnote
Kedondong is also called ba long long in Singapore. Found this sold at Big Box for less than S$2. When I google, I discovered that there are actually lots of health benefits of this fruit. Next time I will try to blend and make juice... yummy!
